礦泉水除了須經核准開發，水源地一公里內不得有可能造成水源污染之虞的污染源。優良的廠商必須定期巡視，甚至採用空拍監測水源地周圍環境。根據CNS國家標準，包裝礦泉水的水源要求更嚴格，必須是單一的地下水源。至於產品的製造過程、標示、農藥殘留也都有特定的標準。這點與一般人所認知「包裝水等於礦泉水」的錯誤觀念，有相當大的出入。
