衛生署說:約1張海苔壽司皮就可獲得一天所需的維生素B12。雖然維生素B12在絕大多數的蔬菜中幾乎找不到,但香菇等菌類的含量相當豐富。特別是香菇中維生素B12的含量比肉類還高。成年人每天吃25公克左右鮮香菇,攝入的維生素B12即可達標。

鮮香菇確實含有維他命B12,但100公克鮮香菇有0.09微克的B12,而100克豬後腿肉含有0.39微克,傳言稱「香菇B12含量比肉類還高」並不正確。成年人維生素B12每日攝取量為2.4微克,吃25克的鮮香菇並未達到每日建議攝取量。
衛福部2018年公布的素食飲食指標手冊,確實指出「1 張海苔壽司皮就可獲得一天所需的維生素 B12」。不過,營養師提醒,每張海苔壽司皮製造來源不均,食品加工過程可能會流失營養素。
