農業與食品科學期刊報導,科學家 Christopher H. Hendon 的實驗發現,「自來水」所含的礦物質,能夠大幅提升咖啡口感。各個地區自來水所含的礦物質都不同,鎂、納等等元素,能夠決定自來水是硬水或是軟水。咖啡本身已含有大量天然化學物質和上千種香氣,用硬水或軟水沖煮,得出的結果有天壤之別。
