截至目前為止沒有直接證據證明蔬菜中殘留的硝酸鹽會致癌。
臺北市政府衛生局檢驗室許朝凱主任建議吃火鍋時儘量避開硝酸鹽含量高的蔬菜,像是菠菜、莧菜、清江菜、小白菜、萵苣等,要不然每週食用一次較為恰當。許主任再次強調,從蔬菜中食用到硝酸鹽對身體健康的影響到目前為止還沒有科學證據證實有直接關係,所以請聽眾朋友不用太過擔心。
