新鮮的金針菇確實含有秋水仙鹼,秋水仙鹼本身是沒有毒的,被人吃下肚後,經胃腸道吸收氧化才會變成有毒物質「氧化二秋水仙鹼」。大量吃下秋水仙鹼確實有可能引發一些中毒症狀,像是噁心、嘔吐、腹痛等症狀或是血尿、血便,更嚴重則可能死亡。但不需要因此拒絕吃金針菇,只要煮熟、適量食用就不會有問題,唯獨尿酸高、痛風或是腎功能不佳、腎臟病患者要特別注意食用量,因為金針菇屬於中普林食物,且含鉀量高喔。
