亞硝酸鹽廣泛存在於自然界中，包括糧食、蔬菜、魚類、蛋類、肉類中，都含有亞硝酸鹽。亞硝酸鹽本身並不致癌，在胃酸作用下與蛋白質分解產物二級胺反應生成亞硝胺才具有致癌作用。目前單以硝酸鹽或亞硝酸鹽的攝取量來討論是否會致癌，眾研究的結果是互相衝突、沒辦法有定論。
