食用”人工“反式脂肪會增加人體血液中不良(低密度脂蛋白膽固醇,LDL-cholesterol)膽固醇的濃度,與增加患心臟病和中風的風險,及罹患第二型糖尿病的較高風險相關。至於牛、羊等反芻動物因為特殊的消化道細菌作用,會把牧草發酵合成部分的反式脂肪酸。有研究指出這些反芻動物來源的反式脂肪中,有一種為共軛亞麻油酸(CLA),對健康不會造成負面效應,常見於市售之天然的乳製品,如:天然奶油。
