根據美國農業部食品安全與檢驗局(USDA's Food Safety and Inspection Service)的說法,不建議在烹飪前對禽肉進行清洗,牛肉、豬肉、羊肉或小牛肉也是一樣——不建議下鍋前清洗。因為生肉及其汁液中的細菌會傳播到其它食物、器皿和表面上。肉品上的細菌牢牢吸附,無法經由清洗去除,反而造成處理食品的區域污染使細菌傳播,可能因此產生交叉污染。
