謠言一則,熱狗與癌症沒有關係。很多營養知識是「推理」出來的,而沒有事實根據,卻流傳廣泛。亞硝酸鹽是合法添加物,最主要有兩個原因,分別是「保色劑」和「抑制肉毒桿菌」,在香腸或熱狗中添加的亞硝酸鹽,在經過降解後會產生「一氧化碳」,一氧化碳會和肌紅蛋白結合形成「亞硝基肌紅蛋白」,使肉品呈現明顯紅色。
「亞硝酸鹽」對身體沒太大害處,一定要在體內和胺類食物結合之後,變成「亞硝酸胺」才會有致癌性。而且隔夜菜的問題,只限於葉菜類,至於根莖類和肉蛋類,由於亞硝酸鹽的含量極低,就更不存在致癌的風險。
