在人體內,好膽固醇的比例應大於壞膽固醇,因為好膽固醇能將血管壁上多餘的壞膽固醇運送回肝臟代謝排除,達到保護血管的作用,一旦壞膽固醇比例過高,沉積在動脈血管壁上,發生氧化後,造成血管內壁發炎,就會增加罹患心血管疾病的風險。要避免壞膽固醇數值太高,飲食中要避免攝取高油脂、高脂肪、高碳水化合物飲食。而要適當攝取蔬菜中的水溶性纖維素,能降低壞膽固醇,有助於達成好壞膽固醇的比例平衡。
